S'mores Rice Krispies Treats

As summer is closely approaching an end I can't help but think about how much I am going to miss those summer nights sitting by a campfire making s'mores. I am not sure where my obsession with s'mores came but I'm going to let you in on a little secret: s'mores are my favorite dessert. I mean how can you not like s'mores? I feel that they are like the perfect treat. You have the nice crunchy graham cracker, a melty rich chocolate and that gooey marshmallow. Then when you add that nice toasty flavor to the roasted marshmallow it just totally throws in a different note of deliciousness! 

For this recipe I wanted to create something that can bring that warm fuzzy feeling of sitting by the campfire without dealing with the smoke and mosquitos. 

S'mores Rice Krispies Treats

Yields 20 squares

Ingredients:

GRAHAM CRUMB

1/4 cup butter, melted

1 pack of graham crackers (about 1 1/2 cups) 

1 tbsp sugar

pinch of salt

RICE TREAT

1/2 cup butter (1 stick)

2 10oz bags of marshmallows

4 cups puffed rice cereal

1 bag of mini marshmallows

6 bite size Hershey's chocolate bars

 

Preheat oven to 350. In a food processor pulse graham crackers and sugar until it is crumbled. Add melted butter and pulse a couple of times. Place crumbs on a baking sheet and bake until golden brown, about 5-7 minutes. Set aside and let cool. 

Place half a bag of marshmallows on a baking sheet. Using oven set to broil or a blow torch toast marshmallows to a golden brown. It's okay if some get a little too toasty, the burnt taste adds that extra campfire flavor. 

In a large pot melt 1/2 cup of butter over medium heat. Add the toasted marshmallows and the rest of the marshmallows. Continue to stir until all marshmallows are melted. 

Remove from heat and add rice puffed cereal and about 1/2 cup of mini marshmallows. Stir until rice is evenly coated. 

Pour rice mixture onto graham crumbs. A thing i learned to help make sure the rice mixture doesn't stick to my hands is rubbing them down with a little bit of cooking oil. After your hands are oiled up mold into a large rectangle. I molded it to about 1in tall and 9in by 13in .

 

 

Make sure to press down so that the crumbs stick to the treats. You want to have that nice crunchy buttery layer all over the bottom of the treats. I am a little bit of a perfectionist so i trimmed off the edges to ensure all the treats were squares.

Top off with a couple of mini marshmallow. I used my blow torch to give them a little color and placed a small piece of chocolate on top and voilà!
