Uchepos are a traditional regional dish of Michoacan, Mexico where my family is from. It is a dish similar to tamales but it packs a lot more flavor because it is made with fresh corn. I recently had a craving for this Mexican sweet corn tamal so I called up my mom and asked her to teach me the ways on how to make these uchepos.
